Rice cooked far past the point of collapse into a silken porridge, with marinated pork, century egg and a rain of ginger and scallion.
Why This Works
Pre-freezing the rice creates internal structural fractures that accelerate starch release during the long simmer, resulting in a naturally luxurious, silken texture without any need for dairy. By dissolving half of the century eggs directly into the porridge, we emulsify their rich, alkaline yolks into the base to build deep, savory complexity that permeates every spoonful.

Directions
Rinse the rice thoroughly and toss with the neutral oil and a pinch of the salt blend; freeze for one hour to fracture the grains.
60 minMarinate the pork in the soy sauce and cornstarch mixture while bringing the chicken stock to a boil in a large pot.
10 minAdd the prepared rice to the boiling stock, reduce to a low simmer, and cook uncovered while stirring occasionally until the grains have fully burst and the texture is thick.
